this was a classic risotto with roasted butternut squash risotto (half puree-half cubed) added at the end, or the
mantecatura, the added flavor of the roasted squash was really gorgeous, i can't wait to make it again ... we've been searching for a way to get the risotto "cleaner" than in the past, and a trick may be to toast the rice for 5 minutes prior to cooking.
